The Reinvention of Lobo

Very recently NJ was invited to sample the creations of Chef Jordi Bernus, the new Chef de Cuisine for Lobo at the Ritz-Carlton Jakarta, Mega Kuningan.  With an international reputation which includes three years at the prestigious 3 Michelin-star elBulli in Roses, Spain, Chef Jordi promises an exciting experience for Jakarta’s epicurean enthusiasts.

Catalan born Chef Jordi’s gastronomic adventure has taken him to some of the world’s most prestigious establishments including Enoteca Pinchiorri, a 3 Michelin-star restaurant in Florence, as well as various 1 Michelin star restaurants such as Drolma and El Raco d’en Freixa in Barcelona.  During his time at elBulli, Jordi worked closely with the renowned Chef Ferran Adria and assisted him with his latest book, The Family Meal: Home Cooking with Ferran Adria.  As a Chef with Michelin-star flare, Jordi’s talent reflects heavily on his cooking, which has been known as ingeniously succulent with a burst of new and refreshing flavors.

Starting in January 2013, authentic degustation set menus by Chef Jordi Bernus are available at Lobo.  The 6-course menu, Rp 850,000++/person,  gives you an introduction to some of Jordi’s creative inventions, from the amazing amuse bouche to tantalizing dishes such as the duet of oyster and foie gras tartar with cardamom foam, Japanese escargots with essence and dashi broth, Tandoori chicken wings with aerial ricotta and many more. The menu is completed with Jordi’s creamy Passion fruit with crema Catalana and tempura chocolate.

Meanwhile, the 8-course menu, Rp 1,050,000++ /person, features some of Jordi’s signature dishes. NJ loves the Pan fried foie gras with forest greens, a superb creation that keeps you guessing about the burst of flavours which comes with every bite.  The menu also includes Polenta gnocchi which Chef Jordi has crafted as a tribute to elBulli. There are also four enticing Venison dishes on the menu, as well as Jordi’s famous Whites dessert with coconut ice cream, fresh yogurt and white chocolate.
